Okra Beef Sauce

A glossy okra sauce with tender beef, dried shrimp and red pepper. Quick, light and best eaten with a swallow.
Ingredients
- 1.5kg Fresh okra
- 500g Beef
- 200g Cow skin (canda)
- 4 pcs Tomatoes
- 2 pcs Onion
- 2 pcs Hot pepper (chili)
- 20g Ginger
- 20g Baking soda (kanwa)
- 4 cubes Seasoning cube (Maggi)
- 10g Salt
- 80g Crayfish
- 500ml Vegetable oil
Instructions
- Simmer the pre-cooked beef and cow skin (canda) with seasoning and salt; save some stock.
- Heat the palm oil and sauté the onions, then add the deseeded tomatoes and chili; sauté 5 minutes and add the dried shrimp.
- Add the pre-cooked meats and stock to the tomato base; simmer on low for 5 minutes.
- In a separate pot, briefly boil the chopped okra with ginger and a pinch of baking soda, then remove from heat as soon as it boils.
- Pour the okra into the meat stew, bring to a boil once, cook 1 minute and turn off immediately.
