Sauted red beans

A homely Cameroonian fried-bean dish: boiled red beans folded into a fragrant tomato sauce built on sautéed meat, blended aromatics, basil and a hint of nutmeg.
Ingredients
- 2 cubes Seasoning cube (Maggi)
- 10g Salt
- 1.4kg Red Beans
- 3 pcs Onion
- 2 pcs Leek
- 500g Beef
- 4 pcs Tomatoes
- 2 cloves Garlic
- 20g Ginger
- 1 bunch Celery
- 1 bunch Basil (masepo)
- 3g Thyme
- 2g Bay leaves
- 5g White pepper
- 500ml Vegetable oil
Instructions
- Boil the red beans until tender, then drain. Blend the onion, garlic, ginger and basil into a smooth paste.
- Heat the oil, salt the meat and fry it without adding water; cover and let it cook in its own juices.
- Add the chopped tomatoes, then the sliced onion and bay leaves; simmer a few minutes into a sauce.
- Stir in the blended aromatics, white pepper, celery, leek and a seasoning cube, then fold in the beans. Simmer briefly, lower the heat and let the oil settle before serving.
