A homely Cameroonian fried-bean dish: boiled red beans folded into a fragrant tomato sauce built on sautéed meat, blended aromatics, basil and a hint of nutmeg.

  1. Boil the red beans until tender, then drain. Blend the onion, garlic, ginger and basil into a smooth paste.
  2. Heat the oil, salt the meat and fry it without adding water; cover and let it cook in its own juices.
  3. Add the chopped tomatoes, then the sliced onion and bay leaves; simmer a few minutes into a sauce.
  4. Stir in the blended aromatics, white pepper, celery, leek and a seasoning cube, then fold in the beans. Simmer briefly, lower the heat and let the oil settle before serving.
