Groundnut Sauce (Maffé)

A smooth Cameroonian peanut sauce: tomato and peanut paste simmered with chicken or meat, seasoned with country spices.
Ingredients
- 300g Beef
- 80g Crayfish
- 2 pcs Tomatoes
- 2 pcs Onion
- 1 bunch Celery
- 1 bunch Parsley
- 1 bunch Basil (masepo)
- 1 pcs Leek
- 20g Ginger
- 2 cloves Garlic
- 5g White pepper
- 500ml Vegetable oil
- 2 cubes Seasoning cube (Maggi)
- 10g Salt
- 100g Roasted peanuts
Instructions
- Roast the peanuts in a dry pan for about 10 minutes, cool, peel and blend with water into a smooth paste.
- Sauté the chopped onion in oil, then add the pre-cooked beef and brown it.
- Add the tomatoes blended with the green spices and simmer until the sauce is dry and the oil rises.
- Stir in the peanut paste and immediately add about 2 cups of water; bring to a boil with the lid half open.
- Once it thickens, stir in the stock, ginger-garlic-pepper paste and remaining onion; simmer 5 minutes.
- Stir in the seasoning, salt and a final drizzle of oil; cook on low for 5 minutes and serve.
