Cameroonian Tomato Sauce

A simple home-style tomato sauce: fresh tomatoes and country spices slow-cooked with fish or meat, served over rice.
Ingredients
- 1kg Rice
- 500g Beef
- 10 pcs Tomatoes
- 70g Tomato paste
- 2 pcs Onion
- 1 bunch Celery
- 20g Ginger
- 1 clove Garlic
- 3g White pepper
- 1 bunch Parsley
- 500ml Vegetable oil
- 2 cubes Seasoning cube (Maggi)
- 10g Salt
Instructions
- Boil the beef with sliced onions, salt and seasoning until very tender; strain and save the rich broth.
- Fry (or air-fry) the cooked beef until it has a crispy brown exterior; set aside.
- Blend the fresh tomatoes, onions, celery and ginger-garlic until smooth.
- Heat the oil and fry the blended tomato, covered, for 10 minutes to reduce its water and acidity.
- Stir in the tomato paste, white pepper and 2 cups of reserved broth; simmer 15 minutes.
- Add the browned beef and simmer 5 minutes; off the heat, toss in chopped parsley and skim excess oil before serving.
