A simple home-style tomato sauce: fresh tomatoes and country spices slow-cooked with fish or meat, served over rice.

  1. Boil the beef with sliced onions, salt and seasoning until very tender; strain and save the rich broth.
  2. Fry (or air-fry) the cooked beef until it has a crispy brown exterior; set aside.
  3. Blend the fresh tomatoes, onions, celery and ginger-garlic until smooth.
  4. Heat the oil and fry the blended tomato, covered, for 10 minutes to reduce its water and acidity.
  5. Stir in the tomato paste, white pepper and 2 cups of reserved broth; simmer 15 minutes.
  6. Add the browned beef and simmer 5 minutes; off the heat, toss in chopped parsley and skim excess oil before serving.
