Egusi Pudding

A steamed Cameroonian delicacy: ground melon seeds blended with stock and spices, wrapped in plantain leaves and steamed into a firm pudding.
Ingredients
- 450g Egusi (melon seeds)
- 500g Beef
- 3 pcs Smoked fish
- 80g Crayfish
- 2 pcs Hot pepper (chili)
- 5g White pepper
- 2 pcs Eggs
- 2 cubes Seasoning cube (Maggi)
- 10g Salt
Instructions
- Blend the dry ground egusi with warm meat stock into a very thick, smooth paste.
- Mix in the sliced beef, smoked fish, crayfish, hot pepper, white pepper, crumbled seasoning cube and salt.
- Crack in the egg and mix vigorously until fully incorporated.
- Spoon the mixture onto double-layered softened plantain leaves, fold tightly and tie securely.
- Steam on a rack above water on medium-low for 45–50 minutes, checking the water level.
