Recipes from the North-West Region
The North-West is Bamenda and the Grassfields, English-speaking highlands. Its signature dish is achu: taro pounded very fine, served with yellow soup, an emulsion of red palm oil and kanwa water whisked until it turns bright yellow. You eat it with your hands, making a well in the taro for the soup. Khati khati, chicken roasted over the fire then simmered in red palm oil, comes with corn fufu and huckleberry leaves.
